UNAPOLOGETICLY AUTHENTIC…
A product of founder Ritz Ang’s cabin fever during Singapore’s COVID circuit breaker, Enclave set out to create a safe space for creatives away from the cookie-cutter deadbeat lifestyle. Attracting guests from across industries, Enclave aims to be an unapologetic space for everyone and anyone to be themselves without being subjected to prejudice or judgement. For its three-week Ghostwriter pop-up, Enclave will set the vibe with its alternative playlists ranging from early 00’s pop to 00’s pop-punk to indie music and tongue-in-cheek décor.
With flavours inspired by Thai cuisine, the food and drinks take a creative and modern approach to traditional recipes. Highlights from the dining menu include Jade Noodles (S$13), a Thai-style twist on Bak Chor Mee with minced pork and pork balls topped with spicy dried shrimp flakes, Nam Priik Ong (S$17), a Northern-Thai chilli beef con carne and Petai beans served with crispy wonton skin and sour cream, and Not a Sushi! (S$19), cured salmon over pan-seared sticky rice with crispy chicken basil oil.
A bright and refreshing selection of cocktails cool down the spice-forward dishes, including the Thai Basil Smash (S$21) with gin, lemon and Thai Holy Basil, a classic Whiskey Sour (S$21) and Love & Murder (S$21) with Campari, Green Chartreuse, lime and a touch of saline. A special off-menu (IYKYK) includes Thai Tea (S$23) and Dirtiest Martini (S$23) with fat-washed olive gin, olive brine and dry vermouth.
